Clean water is a crucial component in the provision of hospital nutrition services because it plays a role in food processing, equipment cleanliness, and environmental sanitation. This study aims to evaluate the effectiveness of the clean water monitoring system in the Nutrition Installation of Undata Regional Hospital, Palu, in 2024. The study used a descriptive method with an observational approach based on secondary data from water quality laboratory tests and observations of sanitation facilities. The results showed that the clean water quality met environmental health standards. Physical parameters included turbidity of 0.35 mg/L (standard <3 mg/L) and Total Dissolved Solids (TDS) of 277 mg/L (standard <300 mg/L). Chemical parameters included iron <0.01 mg/L, fluoride 0.16 mg/L, manganese <0.01 mg/L, nitrate 0.08 mg/L, nitrite <0.003 mg/L, and pH 8.07, all within normal limits. Microbiological examination revealed Escherichia coli levels of 29/100 ml and total coliform levels of 39/100 ml, which still meet applicable requirements. Observations of sanitation facilities revealed that four of six toilets (66.67%) were in good condition, while two toilets (33.33%) were damaged. Furthermore, four of five handwashing facilities (80.00%) were in good condition, and one (20.00%) was damaged. It can be concluded that the clean water monitoring system at the Nutrition Installation of the Undata Regional Hospital (UPT RSUD Palu) has been effective, as evidenced by the water quality meeting standards and the majority of sanitation facilities being in good condition. Regular monitoring of water quality and maintenance of sanitation facilities remain necessary to maintain service quality and food safety in the hospital.
