Analysis of Food Supervision Management Policy and Clean Water Distribution in Undata Regional Hospital Environment

Abstract

Hospitals are health service facilities that must ensure food safety and the availability of clean water to support patient safety and prevent nosocomial infections. This study aims to analyze the management policy of food supervision and clean water distribution at Undata Regional General Hospital (RSUD Undata), Palu, based on national regulations and field implementation. The study employed a descriptive qualitative method with a health policy approach. Data were obtained from secondary sources, including hospital reports, national and international journals, and government regulations published between 2016 and 2026. The findings indicate that the food supervision system and clean water distribution at RSUD Undata Palu have generally followed hospital sanitation standards; however, several challenges remain, such as inadequate monitoring of water quality, limited waste treatment facilities, and the risk of contamination during water distribution and food serving processes. Secondary data from the last three years show an increase in the number of patients and sanitation service demands, which consequently increased the need for clean water supply and food hygiene supervision. Strengthening sanitation monitoring policies, conducting regular water quality inspections, and improving sanitation installation capacity are considered essential strategies to enhance the quality of hospital health services.
